Description

A delicious and hearty Stove Top Beef Stew, perfect for chilly days, filled with tender beef, carrots, and potatoes in a rich broth.


Ingredients

  • 1 pound beef stew meat, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef chunks and brown them on all sides.
  2. Stir in the chopped onion and cook until softened, about 3 minutes.
  3. Add the sliced carrots and diced potatoes. Pour in the beef broth, and stir in the tomato paste, garlic powder, thyme, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 90 minutes, until the beef is tender.

Notes

Serve hot, garnished with fresh parsley. Pairs well with crusty bread or rice. Can be stored for up to 3 days in the refrigerator or frozen for up to 3 months.
