Instructions
- Start by hulling and chopping the strawberries into small pieces so they blend evenly. Let the butter sit at room temperature until it is soft but not melted.
- Place the softened butter in a mixing bowl. Beat the butter with an electric mixer until creamy and smooth.
- Add the chopped strawberries, powdered sugar, and vanilla extract to the bowl. Mix on low to medium speed until the fruit is incorporated and the mixture is fluffy. (No stove required.)
- Transfer the strawberry butter to a clean container. Refrigerate for about 30 minutes to let it firm up. Serve chilled or at room temperature on toasted bread, pancakes, or as a dessert spread.
