Description

Ingredients

  • 1 cup fresh strawberries, chopped
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. Pat the chopped strawberries dry with a paper towel to remove excess juice.
  2. Cream together the softened butter and sugar until light and fluffy, about 2–3 minutes. Beat in the egg and vanilla extract until well combined.
  3. Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped strawberries gently.
  4. Drop spoonfuls (about 1 tablespoon each) of dough onto the prepared baking sheet, spacing them 2 inches apart. Bake for 10–12 minutes or until the edges are lightly golden.
  5. Remove from the oven and let the cookies cool on the sheet for 5 minutes. Transfer them to a wire rack to cool completely.

Notes

Serve warm with tea or cold milk. Store in an airtight container at room temperature for up to 2 days.
