Description

A buttery, oat-forward crust with a bright, jammy strawberry filling, topped with a golden crumble that smells warm with cinnamon and vanilla. Perfect for brunch, snacks, or a picnic.


Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish with butter or nonstick spray and line with parchment if desired.
  2. In a large bowl, mix the rolled oats, all-purpose flour, brown sugar, granulated sugar, melted butter, salt, and vanilla extract until crumbly.
  3. Press half of the oat mixture into the prepared pan to form a crust.
  4. In another bowl, combine the sliced strawberries, cornstarch, lemon juice, and cinnamon. Toss gently and spread over the crust.
  5. Top with the remaining oat mixture and bake for 30–35 minutes until golden brown and bubbling.
  6. Allow to cool completely, then lift out using the parchment and slice into 9 squares.

Notes

Serve warm with vanilla ice cream or at room temperature. Store in an airtight container for up to 24 hours at room temperature, or keep in the fridge for up to 4 days.
