Delightful no-bake truffles with the classic flavors of strawberries and cream.
Ingredients

- 1 ½ cups fresh strawberries, chopped
- 2 tablespoons powdered sugar
- 8 ounces cream cheese, softened
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup crushed shortbread cookies
- 1 ½ cups white chocolate, melted
Instructions
- In a bowl, mix chopped strawberries with powdered sugar and let sit for 10 minutes to macerate.
- In another bowl, beat together cream cheese, heavy cream, and vanilla extract until smooth.
- Fold in the macerated strawberries and crushed shortbread cookies until well combined.
- Chill the mixture for 30 minutes in the refrigerator.
- Once chilled, roll the mixture into small balls and place them on a baking sheet.
- Freeze for 1-2 hours until firm.
- Melt the white chocolate in a microwave or double boiler.
- Dip each truffle into the melted white chocolate, allowing excess to drip off.
- Place back on the baking sheet and let the chocolate set.
