Description

Delightful no-bake truffles with the classic flavors of strawberries and cream.


Ingredients

  • 1 ½ cups fresh strawberries, chopped
  • 2 tablespoons powdered sugar
  • 8 ounces cream cheese, softened
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup crushed shortbread cookies
  • 1 ½ cups white chocolate, melted

Instructions

  1. In a bowl, mix chopped strawberries with powdered sugar and let sit for 10 minutes to macerate.
  2. In another bowl, beat together cream cheese, heavy cream, and vanilla extract until smooth.
  3. Fold in the macerated strawberries and crushed shortbread cookies until well combined.
  4. Chill the mixture for 30 minutes in the refrigerator.
  5. Once chilled, roll the mixture into small balls and place them on a baking sheet.
  6. Freeze for 1-2 hours until firm.
  7. Melt the white chocolate in a microwave or double boiler.
  8. Dip each truffle into the melted white chocolate, allowing excess to drip off.
  9. Place back on the baking sheet and let the chocolate set.
  10. Once the chocolate has set, enjoy your Strawberry Shortcake Truffles!
