Description

A delightful dish combining fresh zucchini with a creamy, cheesy filling, perfect for a light dinner or scrumptious side.


Ingredients

  • 4 medium zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the zucchinis in half lengthwise and scoop out the center flesh to create boats.
  2. In a mixing bowl, combine ricotta, mozzarella, Parmesan, Italian seasoning, garlic powder, salt, and pepper until creamy.
  3. Spoon the cheese mixture into each zucchini half, mounding it slightly.
  4. Place zucchini in a baking dish, pour marinara sauce on top, cover with foil, and bake for 25-30 minutes until tender.
  5. Remove from oven, cool slightly, garnish with fresh basil, and serve warm.

Notes

For extra crunch, add breadcrumbs over the cheese filling before baking. You can customize the filling to your taste.
