Ingredients

- 4 bell peppers
- 1 cup cooked rice
- 1 pound ground meat (beef, turkey, or chicken)
- 1 can diced tomatoes
- 1 cup shredded cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C). Cut the tops off and remove the seeds from the bell peppers.
- In a large pan, heat oil and sauté onions and garlic until soft (3-4 minutes).
- Add ground meat to the pan and cook until browned (5-6 minutes). Stir in rice, diced tomatoes, salt, pepper, and Italian seasoning; simmer for 2 minutes.
- Stuff the bell peppers with the mixture and top with cheese. Place in a baking dish with water, cover with foil, and bake for 30 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly.
