Description

A vibrant and delicious meal of stuffed bell peppers filled with savory ground meat, rice, and cheese.


Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off and remove the seeds from the bell peppers.
  2. In a large pan, heat oil and sauté onions and garlic until soft (3-4 minutes).
  3. Add ground meat to the pan and cook until browned (5-6 minutes). Stir in rice, diced tomatoes, salt, pepper, and Italian seasoning; simmer for 2 minutes.
  4. Stuff the bell peppers with the mixture and top with cheese. Place in a baking dish with water, cover with foil, and bake for 30 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly.

Great for meal prep and can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
