Ingredients

  • 1 sub roll
  • 2 cups mixed salad greens
  • 1/2 cucumber, sliced
  • 1 tomato, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup olives, sliced
  • 4 oz deli meats (turkey, ham, or salami)
  • 1/2 cup grated cheese (your choice)
  • Dressing (Italian or vinaigrette)
  • Salt and pepper to taste

Instructions

  1. Slice the sub roll in half lengthwise.
  2. Layer the mixed salad greens on the bottom half of the roll.
  3. Add sliced cucumbers, tomatoes, red onions, and olives over the greens.
  4. Layer the deli meats on top of the veggies and sprinkle with grated cheese.
  5. Drizzle your favorite dressing over the cheese.
  6. Season with salt and pepper to taste.
  7. Close the sandwich with the top half of the roll, then cut into halves or quarters.
