Description

Delightful bowls featuring fresh vegetables and proteins, inspired by traditional Vietnamese summer rolls.


Ingredients

  • Rice paper wrappers
  • Cooked shrimp or tofu
  • Rice vermicelli noodles
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Lettuce or spinach
  • Julienned carrots
  • Sliced cucumbers
  • Peanut sauce or hoisin sauce for dipping

Instructions

  1. Prepare the rice vermicelli according to package instructions and let it cool.
  2. Fill a large bowl with warm water and dip one rice paper wrapper for about 20 seconds until pliable.
  3. Lay the softened wrapper flat on a clean surface and place a small amount of rice noodles, shrimp or tofu, mint, cilantro, lettuce, carrots, and cucumbers in the center of the wrapper.
  4. Fold the sides over the filling and roll tightly from the bottom to the top.
  5. Serve the assembled rolls with peanut sauce or hoisin sauce for dipping.

Notes

Use fresh ingredients for the best flavor and texture. Keep wrappers and fillings separate until serving for optimal freshness.
