Ingredients

- 1 small head of cabbage, chopped
- 1 onion, chopped
- 2 carrots, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1/4 cup apple cider vinegar
- 1/4 cup sugar
- Salt and pepper to taste
- 1 tablespoon oil for sautéing
Instructions
- In a large pot, heat the oil over medium heat. Add the chopped onion and minced garlic. Sauté until softened, about 3-4 minutes.
- Add the chopped cabbage, diced carrots, and diced bell pepper. Stir well and cook for about 5-7 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low and let it simmer for 20 minutes.
- Stir in the apple cider vinegar and sugar, and season with salt and pepper. Simmer for another 10 minutes. Serve hot.
Notes
For added flair, garnish with fresh herbs like parsley or dill. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
