Description

A delightful combination of tender chicken, crisp vegetables, and sweet pineapple in a tangy sauce.


Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup bell peppers, chopped
  • 1 cup pineapple chunks
  • 1 onion, chopped
  • 3/4 cup sweet and sour sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat until it shimmers slightly.
  2. Add the cubed chicken to the skillet, seasoning with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.
  3. Toss in the chopped onion and bell peppers. Sauté for another 2-3 minutes until vegetables are tender.
  4. Stir in pineapple chunks, sweet and sour sauce, and soy sauce. Cook for an additional 2-3 minutes until heated through.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Consider garnishing with sesame seeds or chopped green onions when serving.
