A delightful combination of tender chicken, crisp vegetables, and sweet pineapple in a tangy sauce.
Ingredients

- 1 lb chicken breast, cubed
- 1 cup bell peppers, chopped
- 1 cup pineapple chunks
- 1 onion, chopped
- 3/4 cup sweet and sour sauce
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- In a large skillet, heat the vegetable oil over medium heat until it shimmers slightly.
- Add the cubed chicken to the skillet, seasoning with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.
- Toss in the chopped onion and bell peppers. Sauté for another 2-3 minutes until vegetables are tender.
- Stir in pineapple chunks, sweet and sour sauce, and soy sauce. Cook for an additional 2-3 minutes until heated through.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Consider garnishing with sesame seeds or chopped green onions when serving.
