- 2 large sweet potatoes, peeled and diced
- 1 cup cottage cheese
- 2 eggs
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract

- 1/2 cup chopped nuts (e.g., pecans or walnuts)
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- Cook or steam the diced sweet potatoes until tender and mash them until smooth. Mix with cottage cheese, eggs, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
- Stir in the rolled oats and chopped nuts until evenly mixed.
- Pour the mixture into the prepared baking dish and spread evenly. Bake for 30–35 minutes, or until set and lightly golden.
- Allow to cool slightly before serving. Enjoy warm.
