Description

A comforting blend of sweet potatoes and tart cranberries enveloped in creamy goodness and topped with melted cheese.


Ingredients

  • 2 large sweet potatoes, peeled and sliced
  • 1 cup fresh or dried cranberries
  • 1 cup heavy cream
  • 1 cup grated cheese (such as Gruyere or Cheddar)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a baking dish by greasing it lightly.
  2. Layer half of the sweet potato slices evenly across the bottom of the greased baking dish.
  3. Sprinkle half of the cranberries over the sweet potato layer. Season with salt and pepper to taste.
  4. Drizzle half of the heavy cream over the layered sweet potatoes and cranberries.
  5. Repeat the process with the remaining sweet potato slices, cranberries, and the rest of the heavy cream.
  6. Dot the top layer with small pieces of butter and sprinkle the grated cheese over everything.
  7. Bake in the preheated oven for about 45-60 minutes, until the sweet potatoes are tender and the top is golden brown.
  8. Let the gratin cool for a few minutes before serving.

Notes

For added flavor, add a pinch of nutmeg or cinnamon; use half-and-half for a lighter option; and try adding chopped nuts like pecans for crunch.
