- 2 large sweet potatoes, peeled and sliced
- 1 cup fresh cranberries
- 1 cup heavy cream
- 1 cup shredded Gruyère cheese
- 1/2 cup breadcrumbs
- 2 tablespoons butter
- Salt and pepper to taste
- 1 teaspoon thyme (optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- Layer the sliced sweet potatoes in the baking dish, then scatter cranberries over them.
- Mix heavy cream with salt, pepper, and thyme, then pour over layered ingredients.
- Top with shredded Gruyère cheese, breadcrumbs, and dot with butter. Cover with foil and bake for 30 minutes.
- Remove foil and bake an additional 15-20 minutes until golden brown and fork-tender. Let cool slightly before serving.
