A beautiful tart combining sweet potatoes, feta cheese, and caramelized onions, perfect for any occasion.
Ingredients

- 2 sweet potatoes, sliced
- 200g feta cheese, crumbled
- 1 onion, sliced
- 1 sheet of puff pastry
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh herbs (thyme or rosemary), optional
Instructions
- Preheat the oven to 200°C (400°F).
- In a pan, heat olive oil over medium heat and add the sliced onion. Cook until caramelized, about 15-20 minutes.
- Boil or steam the sweet potato slices until tender, about 10-15 minutes.
- Roll out the puff pastry on a baking tray lined with parchment paper. Spread caramelized onions over the pastry. Layer sweet potato slices and sprinkle with crumbled feta.
- Season with salt, pepper, and fresh herbs if desired.
- Bake for 25-30 minutes or until the pastry is puffed and golden brown.
- Cool slightly before slicing and serving.
Notes
Delicious served warm or at room temperature. Pairs well with a light salad.
