- 2 large sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 1 tablespoon sriracha sauce
- 1 teaspoon lime juice
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly oil it. Peel and cut sweet potatoes into thin fries.
- Toss fries in a large bowl with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
- Spread fries in a single layer on the baking sheet. Bake for 25–30 minutes, flipping halfway through.
- While fries bake, mix mayonnaise, sriracha, and lime juice in a small bowl to make the dipping sauce.
- Serve fries hot with the sauce on the side.
Notes
For extra crispness, pat sweet potatoes dry before tossing and avoid crowding on the baking sheet.
