Ingredients

  • 1 cup mashed sweet potatoes
  • 1/2 cup gluten-free flour
  • 2 eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 2 tablespoons maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter or oil for cooking

Instructions

  1. Start by gathering all your ingredients. If you haven’t yet mashed your sweet potatoes, boil or bake them until tender, then mash with a fork or potato masher.
  2. In a large mixing bowl, combine the mashed sweet potatoes, gluten-free flour, eggs, milk, maple syrup, baking powder, cinnamon, and salt. Stir well until all ingredients blend together smoothly.
  3. Heat a non-stick skillet over medium heat and add a small amount of butter or oil to coat the surface. Once hot, pour the batter to form pancakes of your desired size.
  4. Cook until bubbles form on the surface of the pancakes, about 2-3 minutes. Carefully flip the pancakes and cook for an additional 2-3 minutes until golden brown. Remove and serve warm with your favorite toppings.

Notes

Serve warm with maple syrup, yogurt, or fresh fruits. Can be made ahead of time and stored in the fridge or freezer.
