Description

Warm, golden sweet potato patties that are crispy on the outside and soft on the inside, perfect as a snack or side dish.


Ingredients

  • 2 medium sweet potatoes
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped herbs (such as parsley, cilantro, or chives)
  • 1 egg (optional for binding)
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Peel and cube the sweet potatoes, then place them in a pot of salted water. Bring to a boil and cook until tender when pierced with a fork, about 12–15 minutes. Drain well and return to the warm pot or a bowl.
  2. Mash the drained sweet potatoes until smooth or slightly chunky, depending on your texture preference. Add the breadcrumbs, chopped herbs, egg (if using), and salt and pepper. Mix until combined and the mixture holds together when pressed. If it feels too wet, add a tablespoon more breadcrumbs.
  3. Form the mixture into small patties, about 2–3 inches across. Heat about 2 tablespoons of oil in a skillet over medium heat. Fry the patties in batches, until golden brown on the first side, about 3–4 minutes. Flip and fry the second side until golden, about another 3–4 minutes.
  4. Transfer cooked patties to a paper towel–lined plate to drain excess oil. Let them rest 1–2 minutes so they finish setting. Check seasoning and serve warm as an appetizer, side, or snack.

Notes

For lower oil finish, try air-frying. Serve warm with a tangy yogurt dip, sour cream with chives, or a spicy mayo.
