- 2 medium sweet potatoes
- 1 cup brie cheese, sliced
- 1 cup fresh or dried cranberries
- 1/2 cup pecans, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh thyme or parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into rounds, about 1/4 inch thick.
- Toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
- Arrange the sweet potato slices on a baking sheet and roast in the oven for about 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
- Remove from the oven and let cool slightly.
- Top each sweet potato round with a slice of brie cheese, a few cranberries, and chopped pecans.
- Return to the oven for an additional 5-10 minutes, until the brie is melted.
- Garnish with fresh thyme or parsley if desired and serve warm.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
