Description

Delightful appetizer featuring sweet potato rounds topped with creamy brie, tart cranberries, and crunchy pecans.


Ingredients

  • 2 medium sweet potatoes
  • 1 cup brie cheese, sliced
  • 1 cup fresh or dried cranberries
  • 1/2 cup pecans, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into rounds, about 1/4 inch thick.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  4. Arrange the sweet potato slices on a baking sheet and roast in the oven for about 20-25 minutes, flipping halfway through, until tender and slightly caramelized.
  5. Remove from the oven and let cool slightly.
  6. Top each sweet potato round with a slice of brie cheese, a few cranberries, and chopped pecans.
  7. Return to the oven for an additional 5-10 minutes, until the brie is melted.
  8. Garnish with fresh thyme or parsley if desired and serve warm.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
