- 8 small corn tortillas
- 1 avocado, sliced
- Fresh cilantro, chopped
- Lime wedges
- Salsa (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, stirring halfway through.
- While the sweet potatoes are roasting, warm the corn tortillas in a skillet for about 30 seconds on each side.
- Assemble the tacos with roasted sweet potatoes, avocado slices, and fresh cilantro. Serve with lime wedges and salsa, if desired.
Notes
For extra flavor, consider marinating the sweet potatoes in the spice mixture for 30 minutes before roasting. Store leftovers separately for up to 3 days.
