Description

Swiss Enchiladas are a delightful fusion of creamy Swiss cheese, shredded chicken, and tangy green salsa, perfect for any occasion.


Ingredients

  • 12 corn tortillas
  • 2 cups shredded cooked chicken
  • 2 cups Swiss cheese, shredded
  • 1 cup sour cream
  • 2 cups green salsa
  • 1/2 cup chopped onions
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent.
  3. In a large mixing bowl, combine shredded chicken, sour cream, and sautéed onions. Season with salt and pepper.
  4. Soften the corn tortillas by placing them in a pan over low heat or microwaving until pliable.
  5. Fill each tortilla with the chicken mixture, roll them tightly, and place seam-side down in a baking dish.
  6. Pour green salsa over the rolled tortillas, ensuring they are well coated.
  7. Sprinkle shredded Swiss cheese evenly over the top.
  8. Cover with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  10. Serve hot, optionally garnishing with fresh cilantro.

Notes

To prevent tortillas from cracking, ensure they are sufficiently soft. For a vegetarian option, substitute chicken with sautéed beans or vegetables.
