- 4 corn tortillas
- 2 cups shredded chicken
- 1 cup Swiss cheese, shredded
- 1 cup green salsa
- 1 tablespoon vegetable oil
- Salt, to taste
- Pepper, to taste
- Sour cream, for serving
- Cilantro, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the vegetable oil over medium heat and fry each corn tortilla until soft; drain on paper towels.
- In a mixing bowl, combine shredded chicken with half of the green salsa, salt, and pepper. Fill tortillas with chicken mixture and Swiss cheese, then roll and place seam-side down in a baking dish.
- Pour remaining green salsa over enchiladas, top with Swiss cheese, and bake for 20 minutes until cheese is melted and bubbly. Serve hot with sour cream and cilantro.
Notes
For added spice, consider mixing jalapeños into the chicken filling or using spicy salsa.
