Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1/4 teaspoon salt
  • 1 cup mini chocolate chips
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together ricotta cheese, softened butter, and sugar in a large mixing bowl until smooth.
  3. Beat in vanilla extract and egg until fully combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Fold in mini chocolate chips.
  7. Scoop heaping tablespoons of cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  10. Dust cookies with powdered sugar before serving.
