- 1 cup mini chocolate chips

Instructions
- Preheat your oven to 350°F (175°C).
- Cream together ricotta cheese, softened butter, and sugar in a large mixing bowl until smooth.
- Beat in vanilla extract and egg until fully combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet mixture, mixing until just combined.
- Fold in mini chocolate chips.
- Scoop heaping tablespoons of cookie dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Dust cookies with powdered sugar before serving.
