Description

A delightful dessert that layers thin crepes with a rich mascarpone filling flavored with coffee, creating a silky and creamy experience.


Ingredients

  • 1 cup all-purpose flour
  • 2 cups milk
  • 4 large eggs
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup brewed coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
  • Cocoa powder for dusting
  • Grated chocolate for garnish

Instructions

  1. In a large bowl, whisk together flour, milk, eggs, sugar, and salt until smooth. Cover and let the batter rest for 30 minutes at room temperature.
  2. In a separate bowl, whip the heavy cream to stiff peaks. Fold in mascarpone until smooth, then mix in cooled coffee and coffee liqueur.
  3. Heat a non-stick skillet over medium heat and brush lightly with butter or oil. Pour thin batter and cook until edges lift; flip to cook the other side.
  4. Spread a thin layer of the mascarpone mixture onto each crepe, roll tightly, and place seam-side down on a serving platter. Chill in the refrigerator for at least 1 hour.
  5. Before serving, dust with cocoa powder and garnish with grated chocolate.

Notes

For a great presentation, arrange slices in a spiral shape and dust with cocoa right before serving.
