- 1 cup all-purpose flour
- 2 cups milk
- 4 large eggs
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- Cocoa powder for dusting
- Grated chocolate for garnish
Instructions
- In a large bowl, whisk together flour, milk, eggs, sugar, and salt until smooth. Cover and let the batter rest for 30 minutes at room temperature.
- In a separate bowl, whip the heavy cream to stiff peaks. Fold in mascarpone until smooth, then mix in cooled coffee and coffee liqueur.
- Heat a non-stick skillet over medium heat and brush lightly with butter or oil. Pour thin batter and cook until edges lift; flip to cook the other side.
- Spread a thin layer of the mascarpone mixture onto each crepe, roll tightly, and place seam-side down on a serving platter. Chill in the refrigerator for at least 1 hour.
- Before serving, dust with cocoa powder and garnish with grated chocolate.
Notes
For a great presentation, arrange slices in a spiral shape and dust with cocoa right before serving.
