Description

Ingredients

  • 1 pre-made pie crust
  • 23 medium tomatoes, sliced
  • 1 cup fresh basil leaves
  • 4 oz goat cheese, crumbled
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the pre-made pie crust on a baking sheet lined with parchment paper.
  3. Arrange the sliced tomatoes on the crust, leaving a border around the edges.
  4. Layer the fresh basil leaves and crumbled goat cheese on top of the tomatoes.
  5. Drizzle the olive oil over the filling and season with salt and pepper.
  6. Fold the edges of the crust over the filling, pleating as necessary.
  7. Brush the crust with the beaten egg.
  8. Bake in the preheated oven for 30-35 minutes, until the crust is golden brown.
  9. Let it cool slightly before slicing and serving.
