An easy, bright twist on classic French toast featuring a custardy brioche bake with fresh strawberries, blueberries, and raspberries.

- 6 slices of brioche bread
- 4 large eggs
- 1 cup milk
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- Butter (for greasing the dish)
- Powdered sugar (for serving, optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish with butter.
- Cut the bread into cubes and distribute half in the prepared dish. In a bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon. Pour half of the egg mixture over the bread cubes, pressing lightly to soak.
- Add the mixed berries over the bread, then pour the remaining egg mixture on top, pressing down gently. Let it soak for 15–30 minutes.
- Bake for 30–35 minutes until the top is golden brown and puffed. Let cool slightly before serving. Dust with powdered sugar if desired.
Notes
For best texture, use day-old bread and let the bake rest for 5–10 minutes after baking. For variations, consider lemon-blueberry, apple-cinnamon, or chocolate-berry options.
