Description

An easy, bright twist on classic French toast featuring a custardy brioche bake with fresh strawberries, blueberries, and raspberries.


Ingredients

  • 6 slices of brioche bread
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • Butter (for greasing the dish)
  • Powdered sugar (for serving, optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with butter.
  2. Cut the bread into cubes and distribute half in the prepared dish. In a bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon. Pour half of the egg mixture over the bread cubes, pressing lightly to soak.
  3. Add the mixed berries over the bread, then pour the remaining egg mixture on top, pressing down gently. Let it soak for 15–30 minutes.
  4. Bake for 30–35 minutes until the top is golden brown and puffed. Let cool slightly before serving. Dust with powdered sugar if desired.

Notes

For best texture, use day-old bread and let the bake rest for 5–10 minutes after baking. For variations, consider lemon-blueberry, apple-cinnamon, or chocolate-berry options.
