Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/2 cup berry puree (optional)

Instructions

  1. Preheat the oven to 325°F (165°C). In a bowl, combine the graham cracker crumbs, melted butter, and sugar. Press this mixture firmly into the bottom of a springform pan and bake for 10 minutes.
  2. In a mixing bowl, beat the cream cheese until smooth and creamy. Add in the powdered sugar and vanilla extract, mixing until fully combined. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  3. Pour half of the cream cheese mixture over the crust you just baked. Layer half of the mixed berries on top of this. Pour the remaining cream cheese mixture over the berries, spreading evenly.
  4. Repeat the layering process with the remaining cream cheese mixture and berries. Cover the cheesecake and chill in the refrigerator for at least 4 hours or overnight for best results. Drizzle with berry puree if desired before serving.

Notes

For best results, chill the cheesecake overnight. You can also add a layer of lemon zest for extra flavor.
