A quick and delicious one-pan dish that combines the bold flavors of tacos with ground turkey, veggies, and cheese, perfect for busy weeknights.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup corn (frozen or canned)
  • 1 can black beans, rinsed and drained
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Toppings: avocado, cilantro, sour cream, tortilla chips

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion, bell pepper, and garlic; sauté until softened, about 5 minutes.
  3. Add ground turkey and cook until browned, breaking it apart as it cooks.
  4. Stir in taco seasoning, corn, black beans, and salsa; simmer for 5-7 minutes until heated through. Sprinkle cheese on top and cover until melted. Serve with toppings of your choice.

Notes

Chop your veggies ahead of time for an even quicker meal. Adjust spice level based on salsa and taco seasoning. Add a squeeze of lime for a fresh burst of flavor.
