- 1 lb Italian sausage
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 3 large potatoes, sliced
- 1 cup heavy cream
- 2 cups kale, chopped
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat a splash of olive oil over medium heat until shimmering.
- Add the Italian sausage and cook until browned, breaking it apart with a spoon.
- Introduce the diced onion and minced garlic, cooking until the onion is translucent and fragrant, about 3-4 minutes.
- Pour in the chicken broth and bring to a boil. Add the sliced potatoes and let it simmer until the potatoes are tender, about 15 minutes.
- Stir in the heavy cream and chopped kale, cooking until the kale is wilted, about 5 minutes.
- Taste and season with salt and pepper before serving hot.
Notes
For added flavor, serve with crusty bread and grated Parmesan cheese. Leftovers can be stored in the refrigerator for 3 days or frozen for 3 months.
