Description

A creamy and hearty Tuscan soup filled with Italian sausage, fresh vegetables, and rich broth, perfect for cozy dinners.


Ingredients

  • 1 lb Italian sausage
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 large potatoes, sliced
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat until shimmering.
  2. Add the Italian sausage and cook until browned, breaking it apart with a spoon.
  3. Introduce the diced onion and minced garlic, cooking until the onion is translucent and fragrant, about 3-4 minutes.
  4. Pour in the chicken broth and bring to a boil. Add the sliced potatoes and let it simmer until the potatoes are tender, about 15 minutes.
  5. Stir in the heavy cream and chopped kale, cooking until the kale is wilted, about 5 minutes.
  6. Taste and season with salt and pepper before serving hot.

Notes

For added flavor, serve with crusty bread and grated Parmesan cheese. Leftovers can be stored in the refrigerator for 3 days or frozen for 3 months.
