Description

A cozy soup filled with savory broth, tender white beans, and browned Italian sausage, featuring leafy kale and aromatic herbs.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 can (15 ounces) white beans, drained and rinsed
  • 4 cups chicken broth
  • 8 ounces Italian sausage, casings removed
  • 2 cups kale, chopped
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Chop the onion, mince the garlic, and dice the carrots and celery.
  2. Add the chopped onion, minced garlic, diced carrots, and diced celery to the pot. Sauté until softened and fragrant, about 5–7 minutes.
  3. Stir in dried thyme and dried rosemary. Add the Italian sausage and cook until browned, about 6–8 minutes.
  4. Add drained white beans and chicken broth. Bring to a boil, then reduce heat to low. Stir in chopped kale and simmer for 15–20 minutes. Season with salt and pepper and serve hot topped with Parmesan cheese.

Notes

For added richness, you can stir in 1/2 cup of heavy cream at the end. This soup pairs well with crusty bread or garlic toast.
