- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 1 tablespoon cornstarch
- 1 cup heavy whipping cream
- 1 cup diced pineapple
- 2–3 passion fruits
- Fresh mint leaves (for garnish)
Instructions
- Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper.
- In a clean bowl, beat the egg whites until soft peaks form. Gradually add sugar, continuing to beat until stiff peaks and glossy.
- Gently fold in vanilla, vinegar, and cornstarch. Spoon meringue onto prepared sheet, shaping into a circle with a well in the center. Bake for 1 hour, then turn off the oven and let cool inside.
- Once cooled, whip cream until soft peaks form. Spread cream over the meringue, top with pineapple and passion fruit pulp, and garnish with mint. Serve immediately.
Notes
Best served fresh. Store meringue base at room temperature in an airtight container, but do not top with cream and fruit until serving.
