- 1 cup raspberries

Instructions
- Measure the chia seeds, almond milk, maple syrup, and vanilla extract. Rinse and dry the raspberries.
- In a bowl, combine almond milk, chia seeds, maple syrup, and vanilla extract. Whisk vigorously for about 30 seconds.
- Refrigerate the mixture for at least 4 hours or overnight, stirring once after 10-15 minutes.
- Once thick, layer the pudding into cups with raspberries and garnish with fresh mint if desired. Serve chilled.
Notes
Stir well at the start to prevent clumps. Adjust sweetness after chilling.
