- Lasagna noodles
- Ricotta cheese
- Mozzarella cheese
- Parmesan cheese
- Spinach
- Zucchini
- Mushrooms

Instructions
- Preheat the oven to 375°F (190°C). Chop the onion and garlic, slice the zucchini and mushrooms, and rinse the spinach.
- Heat olive oil in a large skillet over medium heat. Sauté the chopped onions and garlic until soft and fragrant, about 3 minutes. Add zucchini and mushrooms; cook until tender, around 5–7 minutes. Stir in spinach and season with salt, pepper, basil, and oregano.
- In a separate bowl, mix ricotta cheese with a pinch of salt and pepper.
- Spread a thin layer of tomato sauce at the bottom of a baking dish. Layer with lasagna noodles, ricotta mixture, sautéed vegetables, mozzarella cheese, and another layer of sauce. Repeat layers, finishing with sauce and mozzarella, then sprinkle with Parmesan.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
- Let it cool for a few minutes before slicing.
Notes
For best flavor, use fresh vegetables and consider pre-salting watery veggies. Assemble a day ahead for enhanced flavor.
