Ingredients

  • Lasagna noodles
  • Ricotta cheese
  • Mozzarella cheese
  • Parmesan cheese
  • Spinach
  • Zucchini
  • Mushrooms
  • Tomato sauce
  • Garlic
  • Onion
  • Olive oil
  • Salt
  • Pepper
  • Basil
  • Oregano

Instructions

  1. Preheat the oven to 375°F (190°C). Chop the onion and garlic, slice the zucchini and mushrooms, and rinse the spinach.
  2. Heat olive oil in a large skillet over medium heat. Sauté the chopped onions and garlic until soft and fragrant, about 3 minutes. Add zucchini and mushrooms; cook until tender, around 5–7 minutes. Stir in spinach and season with salt, pepper, basil, and oregano.
  3. In a separate bowl, mix ricotta cheese with a pinch of salt and pepper.
  4. Spread a thin layer of tomato sauce at the bottom of a baking dish. Layer with lasagna noodles, ricotta mixture, sautéed vegetables, mozzarella cheese, and another layer of sauce. Repeat layers, finishing with sauce and mozzarella, then sprinkle with Parmesan.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  6. Let it cool for a few minutes before slicing.

Notes

For best flavor, use fresh vegetables and consider pre-salting watery veggies. Assemble a day ahead for enhanced flavor.
