Description

A warm, comforting side dish featuring tender potatoes in a creamy Velveeta cheese sauce, perfect for weeknights and holiday gatherings.


Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 lb Velveeta cheese, cubed
  • 1 cup milk
  • 1/2 cup butter
  • 1 onion, chopped
  • Salt and pepper to taste
  • Optional: bacon bits or green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Peel and dice the potatoes into bite-sized cubes.
  2. Fill a large pot with water, add a pinch of salt, and bring to a boil. Add the diced potatoes and cook until tender, about 10–15 minutes. Drain the potatoes.
  3. In the same pot, melt the butter over medium heat and sauté the chopped onion until translucent, about 3–4 minutes.
  4. Lower the heat and add the Velveeta cheese and milk to the pot with the onions. Stir continuously until the cheese melts and the sauce is smooth. Fold in the cooked potatoes and season with salt and pepper.
  5. Pour the mixture into a greased baking dish and bake for 30–35 minutes until bubbly and slightly golden. Let sit for a few minutes before serving, garnished with optional bacon bits or green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3–4 days. Reheat in a 350°F oven or microwave. For longer storage, freeze for up to 2 months.
