Colorful and fruity cookies made with Jello that are soft and chewy, perfect for any gathering.

- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup Jello mix (variety of flavors)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, Jello mix, baking powder, and salt. Gradually add to the wet mixture until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper and bake for 10-12 minutes, or until edges are lightly golden. Cool briefly on the tray, then transfer to a wire rack. Dust with powdered sugar before serving.
Notes
Experiment with different Jello flavors, add chocolate chips or nuts for extra flavor.
