Description

A simple and wholesome bake featuring warm spice and juicy pear in a tender, slightly nutty cake, perfect for snacks or dessert.


Ingredients

  • 2 cups wholemeal flour
  • 1 cup ripe pears, peeled and diced
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a baking dish (about 20 x 20 cm / 8 x 8 in).
  2. In a bowl, whisk together the wholemeal flour, baking powder, cinnamon, and a pinch of salt.
  3. In another bowl, whisk the eggs with the brown sugar until slightly thickened. Add the milk, vegetable oil, and vanilla extract; whisk until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Gently fold in the diced pears.
  5. Pour the batter into the prepared baking dish and smooth the top. Bake for 30–35 minutes, or until golden and a toothpick inserted in the center comes out clean.
  6. Remove from the oven and cool in the dish for 10–15 minutes before transferring to a wire rack.
  7. Serve warm or at room temperature, optionally topped with yogurt or ice cream.

Notes

For extra moistness, fold in applesauce or a grated apple with the pears. Use nuts or dried fruits for variations.
