A simple and wholesome bake featuring warm spice and juicy pear in a tender, slightly nutty cake, perfect for snacks or dessert.

- 2 cups wholemeal flour
- 1 cup ripe pears, peeled and diced
- 1/2 cup brown sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 180°C (350°F). Grease a baking dish (about 20 x 20 cm / 8 x 8 in).
- In a bowl, whisk together the wholemeal flour, baking powder, cinnamon, and a pinch of salt.
- In another bowl, whisk the eggs with the brown sugar until slightly thickened. Add the milk, vegetable oil, and vanilla extract; whisk until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined. Gently fold in the diced pears.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 30–35 minutes, or until golden and a toothpick inserted in the center comes out clean.
- Remove from the oven and cool in the dish for 10–15 minutes before transferring to a wire rack.
- Serve warm or at room temperature, optionally topped with yogurt or ice cream.
Notes
For extra moistness, fold in applesauce or a grated apple with the pears. Use nuts or dried fruits for variations.
