Ingredients

- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 egg
- 2 1/2 cups all-purpose flour
- 1 teaspoon almond extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Whole almonds
- Red food coloring or raspberry jam
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and powdered sugar until smooth and fluffy. Add in the vanilla extract, almond extract, and egg; mix until combined.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add to the creamed mixture, mixing until just combined.
- Divide the dough into small pieces and shape them into finger forms. Press a whole almond at one end of each cookie to mimic a fingernail.
- Bake in the preheated oven for 15-20 minutes, or until lightly golden.
- Let the cookies cool on a wire rack. Optionally brush with red food coloring or dip in raspberry jam for a spooky effect.
Notes
Store in an airtight container at room temperature for up to a week, or refrigerate for up to 10 days. Can be frozen for up to three months.
