Description

Ingredients

  • 1 pound beef stew meat, cubed
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 cup green peas (optional)

Instructions

  1. In a large pot, brown the beef stew meat over medium heat until nicely seared on all sides.
  2. Add the chopped onions and minced garlic to the pot and sauté until the onions turn translucent.
  3. Pour in the beef broth, stir to combine, and bring to a gentle boil. Reduce the heat and add the diced potatoes, sliced carrots, and celery along with thyme, rosemary, salt, and pepper.
  4. Cover the pot and let the stew simmer for about 1.5 to 2 hours, or until the beef is tender. Stir in the green peas during the last 10 minutes if desired. Serve hot.

Notes

For extra flavor, use a mix of fresh and dried herbs. Feel free to customize the vegetables used.
