- 1 pound beef stew meat, cubed
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 1 cup green peas (optional)
Instructions
- In a large pot, brown the beef stew meat over medium heat until nicely seared on all sides.
- Add the chopped onions and minced garlic to the pot and sauté until the onions turn translucent.
- Pour in the beef broth, stir to combine, and bring to a gentle boil. Reduce the heat and add the diced potatoes, sliced carrots, and celery along with thyme, rosemary, salt, and pepper.
- Cover the pot and let the stew simmer for about 1.5 to 2 hours, or until the beef is tender. Stir in the green peas during the last 10 minutes if desired. Serve hot.
Notes
For extra flavor, use a mix of fresh and dried herbs. Feel free to customize the vegetables used.
