Deliciously fudgy brownies made with grated zucchini for added moisture and health benefits.


Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a large bowl, mix together the grated zucchini, vegetable oil, eggs, and vanilla extract until well incorporated.
  3. In another bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking soda, baking powder, and salt. Combine with the wet ingredients until just mixed. Fold in chocolate chips if using.
  4. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool before cutting into squares.

Notes

Squeeze out excess moisture from the zucchini before mixing. For vegan brownies, substitute eggs with flax eggs.
