Description

A comforting Tuscany Soup with savory Italian sausage, tender potatoes, and vibrant kale, perfect for chilly evenings.


Ingredients

  • 1 lb Italian sausage
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 2 large potatoes, diced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned, about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, approximately 3-4 minutes.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Add the diced potatoes to the pot and cook until tender, about 15 minutes.
  5. Stir in the chopped kale and let it wilt for about 2-3 minutes.
  6. Reduce the heat and add the heavy cream to the pot. Stir well to incorporate.
  7. Season with salt, pepper, and red pepper flakes if desired. Taste and adjust the seasoning.
  8. Serve the soup hot, garnished with fresh parsley or a sprinkle of cheese if you like.

Notes

For a healthier twist, opt for turkey sausage instead of Italian sausage. You can freeze the soup for up to 3 months.
