- 1 lb Italian sausage
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 cups kale, chopped
- 2 large potatoes, diced
- 1 cup heavy cream
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned, about 5-7 minutes.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent, approximately 3-4 minutes.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the diced potatoes to the pot and cook until tender, about 15 minutes.
- Stir in the chopped kale and let it wilt for about 2-3 minutes.
- Reduce the heat and add the heavy cream to the pot. Stir well to incorporate.
- Season with salt, pepper, and red pepper flakes if desired. Taste and adjust the seasoning.
- Serve the soup hot, garnished with fresh parsley or a sprinkle of cheese if you like.

For a healthier twist, opt for turkey sausage instead of Italian sausage. You can freeze the soup for up to 3 months.
