Description

A cozy cheeseburger soup that delivers the flavors of a cheeseburger in a warm, creamy bowl.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, diced
  • 1 cup cheddar cheese, shredded
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: diced pickles and mustard for garnish

Instructions

  1. Preparation: Chop the onion, mince the garlic, and dice the potatoes and carrots. Shred the cheddar if needed. Measure the broth and milk so everything is ready to go.
  2. Sauté the Beef and Aromatics: In a large pot over medium heat, add the ground beef and cook until browned. Break it into small pieces as it cooks. Drain excess fat, then add the chopped onion and minced garlic. Cook until the onion softens and smells sweet, about 3–4 minutes.
  3. Simmer the Vegetables: Pour in the beef broth. Add the diced potatoes and carrots. Bring the pot to a boil, then reduce the heat to a simmer. Cook until the potatoes and carrots are tender, about 12–15 minutes.
  4. Finish with Milk and Cheese: Lower the heat to gentle and stir in the milk. Add the shredded cheddar a handful at a time, stirring until melted and smooth. Taste and season with salt and pepper.

Notes

For a creamier finish, stir in a splash of cream or a little sour cream just before serving. Can be stored in the refrigerator for up to 3-4 days.
