Description

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 2 cups corn (fresh or frozen)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 2 medium potatoes, diced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent (3-4 minutes).
  2. Stir in the diced potatoes and cook for about 5 minutes.
  3. Add chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender (10-15 minutes).
  4. Stir in shredded chicken and corn until heated through. Pour in heavy cream and season with salt and pepper. Simmer for another 5 minutes. Serve hot, garnished with chopped green onions.

Notes

For added flavor, sauté chopped celery or bell pepper with onions and garlic. Use rotisserie chicken for quicker preparation. Substitute half of the cream for milk for a lighter option.
