Ingredients

- 1 lb chicken breast
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1 avocado, sliced
- 1/2 cup red onion, diced
- 1/2 cup salsa
Instructions
- Mix together the chopped cilantro, lime juice, cumin, chili powder, salt, and pepper to create a marinade.
- Add the chicken breasts to the marinade and let them sit for at least 30 minutes in the refrigerator.
- Preheat the grill to medium-high heat and grill the marinated chicken for about 6-7 minutes on each side until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes before slicing. Warm the tortillas on the grill or in a skillet.
- Assemble the tacos by placing sliced chicken in each tortilla, adding avocado, red onion, and salsa as desired. Serve immediately.
Notes
Marinate the chicken longer for more flavor and allow it to rest after grilling for juiciness.
