- 1 pound chicken breast, cooked and shredded
- 1 cup shredded cheese (cheddar or pepper jack)
- 1 tablespoon taco seasoning
- 8 small corn or flour tortillas
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- Sour cream and salsa for serving
- Oil for frying
Instructions
- Heat oil in a skillet over medium heat until it’s hot but not smoking. Test it by dropping a tiny piece of tortilla to see if it sizzles.
- In a bowl, mix the shredded chicken with the taco seasoning until well combined.
- Place some of the chicken mixture on each tortilla, sprinkle generously with cheese, and fold them in half.
- Fry each taco in the hot oil until crispy and golden brown on both sides, about 2-3 minutes. Remove from oil and let them drain on paper towels.
Notes
For best texture and flavor, use freshly cooked chicken or rotisserie chicken. Optional: Bake at 375°F (190°C) for a healthier option.
