Description

Ingredients

  • 3 medium zucchinis, grated
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Combine the grated zucchini, eggs, flour, Parmesan cheese, baking powder, salt, and pepper in a large bowl. Mix until just combined.
  3. Pour the mixture into the prepared baking dish and spread it evenly. Drizzle the olive oil over the top.
  4. Bake in the preheated oven for 25-30 minutes, or until golden brown and set in the center.
  5. Cool for a few minutes before slicing and garnish with fresh basil.

Notes
