- 3 medium zucchinis, grated
- 2 eggs
- 1 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- 1/4 cup olive oil
- Fresh basil for garnish
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- Combine the grated zucchini, eggs, flour, Parmesan cheese, baking powder, salt, and pepper in a large bowl. Mix until just combined.
- Pour the mixture into the prepared baking dish and spread it evenly. Drizzle the olive oil over the top.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and set in the center.
- Cool for a few minutes before slicing and garnish with fresh basil.
Notes
To enhance flavor, experiment with herbs or different cheeses. For a spicier version, add chili flakes.
