  • Cooked chicken or beans

  • Black olives (for decorating)
  • Sour cream (for serving)

Instructions

  1. Start by heating a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle cheese over half of it.
  3. Add cooked chicken or beans on top of the cheese if using.
  4. Fold the tortilla over to create a half-moon shape.
  5. Cook until the bottom is golden and the cheese is melted, about 3 minutes, then flip and cook the other side.
  6. Remove from heat and let cool slightly.
  7. Use bell peppers to cut out jack-o-lantern faces on the quesadilla’s top side.
  8. Serve with sour cream and toppings like black olives.
