Instructions
- Start by heating a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle cheese over half of it.
- Add cooked chicken or beans on top of the cheese if using.
- Fold the tortilla over to create a half-moon shape.
- Cook until the bottom is golden and the cheese is melted, about 3 minutes, then flip and cook the other side.
- Remove from heat and let cool slightly.
- Use bell peppers to cut out jack-o-lantern faces on the quesadilla’s top side.
- Serve with sour cream and toppings like black olives.
