  • 300g water
  • 100g active sourdough starter
  • 10g salt

Instructions

  1. Begin by ensuring your sourdough starter is bubbly and active. Feed it about 4-6 hours before you plan to bake, allowing it to reach its peak activity.
  2. In a large mixing bowl, combine the 500g of all-purpose flour, 300g of water, and 100g of your active sourdough starter. Mix these ingredients until no dry flour remains, then let this mixture rest for 30 minutes.
  3. After autolyse, sprinkle 10g of salt over the dough. Incorporate the salt into the mix by pinching and folding the dough until it is fully dissolved.
  4. Cover the bowl with a damp towel and let the dough rise at room temperature for 4-6 hours. Every 30 minutes during this period, perform stretch and folds to strengthen the dough.
  5. Once the dough has risen and is bubbly, transfer it to a floured surface. Gently shape it into a round loaf, then let it rest for 30 minutes.
  6. After resting, shape your loaf again and place it seam-side up in a floured proofing basket. Cover it and allow it to rest for another 1-2 hours.
  7. Preheat your oven to 450°F (230°C) with a Dutch oven inside for at least 30 minutes. Carefully turn your proofed dough onto parchment paper and score the top with a sharp blade.
  8. Use oven mitts to transfer the loaf into the hot Dutch oven, cover it, and bake for 30 minutes. Remove the lid and bake for an additional 10-15 minutes until the crust is a deep golden brown.
  9. Once baked, remove the bread from the Dutch oven and place it on a wire rack to cool completely before slicing.

Notes

Store your sourdough bread at room temperature in a cloth bag or wrapped in parchment paper to preserve its crust.
