- 2 cups chopped spinach
- 1 cup crumbled feta cheese
- 1/2 cup chopped sun-dried tomatoes
- 2 cloves minced garlic

- Zest of 1 lemon

- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Combine chopped spinach, feta cheese, sun-dried tomatoes, garlic, oregano, lemon zest, salt, and pepper in a large bowl.
- Carefully cut a pocket into each chicken breast.
- Generously stuff each pocket with the filling mixture.
- Heat olive oil in a skillet over medium heat and sear each stuffed chicken breast for 3-4 minutes on each side.
- Transfer the seared chicken to a baking dish and bake for 25-30 minutes or until fully cooked.
- Allow the chicken to rest for 5 minutes before serving.
