A vibrant dish that combines succulent chicken with a flavorful filling of spinach, feta cheese, and sun-dried tomatoes, perfect for weeknight dinners or special occasions.


Ingredients

  • 4 chicken breasts
  • 2 cups chopped spinach
  • 1 cup crumbled feta cheese
  • 1/2 cup chopped sun-dried tomatoes
  • 2 cloves minced garlic
  • 1 teaspoon dried oregano
  • Zest of 1 lemon
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine chopped spinach, feta cheese, sun-dried tomatoes, garlic, oregano, lemon zest, salt, and pepper in a large bowl.
  3. Carefully cut a pocket into each chicken breast.
  4. Generously stuff each pocket with the filling mixture.
  5. Heat olive oil in a skillet over medium heat and sear each stuffed chicken breast for 3-4 minutes on each side.
  6. Transfer the seared chicken to a baking dish and bake for 25-30 minutes or until fully cooked.
  7. Allow the chicken to rest for 5 minutes before serving.
