- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 3 cups frozen tater tots
- 1 cup shredded cheese
- Sour cream and chopped green onions for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Brown the ground beef in a large skillet over medium heat and drain excess fat.
- Stir in the black beans, corn, diced tomatoes, and taco seasoning, cooking for about 5 minutes until heated through.
- Spread the meat mixture evenly in a greased casserole dish and layer the frozen tater tots on top.
- Bake for 25-30 minutes or until the tater tots are golden brown and crispy.
- Sprinkle cheese over the top and return to the oven for an additional 5 minutes until melted. Serve warm with sour cream and green onions if desired.
Notes
For added flavor, sauté chopped onions and garlic with the ground beef. Customize by swapping tater tots for French fries or homemade potato wedges.
