Description

Delightful bites inspired by Samoa cookies, featuring coconut, chocolate, and peanut butter without the need for baking.


Ingredients

  • 1 cup roasted unsweetened shredded coconut
  • 1 cup graham cracker crumbs
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. In a large bowl, mix together the shredded coconut, graham cracker crumbs, peanut butter, honey, and salt until well combined.
  2. Roll the mixture into small balls and place them on a parchment-lined baking sheet.
  3. Refrigerate for about 30 minutes to set.
  4. While chilling, melt the chocolate chips and coconut oil together in a microwave-safe bowl or over a double boiler.
  5. Once the cookie bites are firm, dip each one in the melted chocolate, coating it completely.
  6. Return the coated bites to the baking sheet and drizzle with any remaining chocolate.
  7. Chill in the refrigerator until the chocolate hardens, then serve.
