Ingredients

- 1 cup roasted unsweetened shredded coconut
- 1 cup graham cracker crumbs
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1/4 teaspoon salt
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a large bowl, mix together the shredded coconut, graham cracker crumbs, peanut butter, honey, and salt until well combined.
- Roll the mixture into small balls and place them on a parchment-lined baking sheet.
- Refrigerate for about 30 minutes to set.
- While chilling, melt the chocolate chips and coconut oil together in a microwave-safe bowl or over a double boiler.
- Once the cookie bites are firm, dip each one in the melted chocolate, coating it completely.
- Return the coated bites to the baking sheet and drizzle with any remaining chocolate.
- Chill in the refrigerator until the chocolate hardens, then serve.
